Warm Miso Ginger Dressing
(goes very well with sautéed vegetables, like bok choi)
- 1/2 cup mirin
- 1 1/2 miso paste
- 1 tbsp lime or lemon juice
- 1 tbsp rice vinegar
- a good dash of sriracha
- a thumb's worth of ginger, grated
- 1 clove garlic, crushed
- 1 tbsp sesame oil
- Mix mirin, miso, lime juice, vinegar and sriracha in a small bowl until well combined.
- Heat a bit of oil in a small saucepan on high heat. Add garlic and ginger and stir for for about a minute, until fragrant.
- Add miso mixture and cook for another minute, under slightly thickened.
- Remove from heat, add sesame oil.
- Drizzle over vegs.
